  • 1/2 cup cooked chickpeas Drained and rinsed
  • 1/2 cup shredded carrots
  • 1/2 cup shredded red cabbage
  • 1/2 cup sliced tomatoes
  • 1/2 cup spinach
Greek Dressing
  • 1 cup extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 4 cloves garlic, pressed or minced
  • 1 tbsp dried oregano
  • 2 tsp Dijon mustard
  • 11/2 tsp salt
  • 1 tsp freshly ground black pepper
  • 1 tsp agave nectar

  • 1/2 cup cooked chickpeas Drained and rinsed
  • 1/2 cup shredded carrots
  • 1/2 cup shredded red cabbage
  • 1/2 cup sliced tomatoes
  • 1/2 cup spinach

Instructions
  1. This Greek dressing keeps well for few weeks. So Feel free to prepare the dressing ahead of time and store it in a fridge as you only need 2 tbsp for this recipe.
  2. Dressing goes on the bottom so it stays separate from the greens. The next layer up is composed of heartier, heavier ingredients like Chickpeas, carrots, cabbage, tomatoes, spinach and more chick peas.
  3. When you’re ready to eat, just flip the jar over and give it a few gentle shakes to distribute the dressing and the ingredients. Flip it back over, unscrew the lid and stick a fork in it! And enjoy...
